Chocolate Wafer Sandwich Cookies

The kids always ask me to bake something for an after-school snack and these cookies look to be a quick recipe I can whip up for them. I have everything on hand.
The cookie dough comes together easily
I rolled them out without any trouble and used my trusty stemless wine glass as a cookie cutter.
Side Note: This is the last time you will see my makeshift biscuit cutter. My aunt in Texas says I should not be using a wine glass and bought me a couple of biscuit cutter sets in various sizes, so watch out for when I debut those – Thank you Auntie Liz!
Once I had the rounds cut, I put them in the freezer to firm up.
This is a recurring theme in Martha’s’ cookies and I have to say it really does make a difference in the shape of the final product.
These baked like a charm and the vanilla cream filling was also a breeze to make.
Once they were cooled, I was able to fill them.
The kids really liked them.
I thought they tasted like Oreos – they were good, don’t get me wrong, but there was nothing really special about them.
I am sure they will be requested again and I will happily oblige as they were not difficult
