Lime-Glazed Cookies

I am a big fan of lime 

Key Lime Pie, wedge of lime in my drinks, lime with cilantro is salsas and marinades – you name it. 

I liked the looks of these right away and was excited to try them and I always have lime so it is a no brainer.

It seems like a basic sugar cookie recipe; butter, sugar, lime and flour all sound good to me 

I have beat the butter and sugar and added the lime. 

I agree with Martha on the fresh squeezed juices. If the amount is only a teaspoon, I will use the bottled stuff.  But the fresh really does make a difference. 

Once the dough is made, I form the log and put it in the freezer to firm. The lime smells amazing. 

I love slice and bakes; you can make this recipe ahead of time and slice and bake them as you need.  They also tend to have short baking times 

I make the glaze while they are baking – basic glaze comes together easily 

I leave a few to try without glaze to see if it makes a difference 

Guys, these are delicious –total homerun! 

The cookie has great texture and practically melts in your mouth 

The flavour is also bang on!  The perfect combination of tart and sweet! 

Perfect refreshing spring cookie! 

Also, the you don’t need the glaze, they are fantastic on their own, but the glaze does kick it up a notch!
