Baguette
Bread day!
I have said it before and I will say it again – I LOVE BREAD!
I have passed this love on to two of my three sons – It was a proud moment when my middle son asked for a baguette for his treat from the grocery store. Not a donut, not a cupcake, a baguette – and he ate it! That’s my boy!
It is a miserable day out, which means it is a good day for proofs and second proofs.
I had to start this yesterday as the starter needs 12-16 hours to do its yeast-flour thing
Three ingredients for the starter: flour, active yeast, and water.
It is supposed to be thin and runny
This is what it looked like
Not thin or runny…oh well, we’ll see
I came down this morning and it was yeasty smelling and had expanded and deflated so we are moving forward
Dumped the rest in and mixed in the mixer, then kneaded by hand

I have to fold this like a letter and it works out ok, there are a few photos in the book to help make sure I am doing it right

More folding and it seems fine, and now I have to roll it out and let it rise
I use the baking stone and preheat the oven and load them in
Holy cow I love the smell of bread baking in the oven
My house smells fantastic
I pulled them out of the oven a few minutes early as they were a nice golden colour
It smells so good
I didn’t seal the seam too well as it has split a little down the bottom, see?
It has a great crusty crust and has a nice chewy centre. It is a little salty for my taste
I will definitely make this again. It was a simple bake that was not too time consuming.
And I want to get the seam right
