Maple Walnut Cupcakes
We are trying a cupcake recipe today, tonight really
I have a dedicated photographer on this one
This looks to be a simple cake recipe
Beat the sugar with the butter, add the eggs then add the flour mixture. Then I add the chopped walnuts
This batter is on the dense side, more like a muffin mix, rather than a fluffy cake – not bad just dense – it smells amazing
While these are in the oven, I start on the frosting
This frosting is made of maple syrup egg yolks and butter
I have to ‘cook’ the syrup to 240 degrees
This is a weird process for me
I am trying not to burn it – Martha says this will take 15 minutes but we are already at 212 so we will see
It took 15 minutes – the temperature really yo-yoed
So, my big mixer is too big for it to whisk just three egg yolks so I needed to bust out my hand mixer
It was working just fine incorporating the syrup to the eggs, but it needed more power for the whipping of the butter.
I transferred it back to the stand mixer after all the butter was added and let ‘er rip!
Before I put the pedal to the medal in the stand mixer it was runny, 2 minutes on this beast and it fluffed up beautifully
The frosting was still a little gooey, so I did a rustic pipe job on the cupcakes
There is an option to candy some walnuts for on top, I just left them plain and only put them on half
I stay away from nuts so I didn’t try these
But the frosting was really good
My mom’s reaction was “it tastes like Maple Walnut ice cream – but cake!”
Hubby said they were really good
The kids devoured them – as always
