Lemon Madeleines

So, I know I go on about pans, but this recipe actually requires a madeleine pan. I am sure you could use a lady finger pan but that is just as obscure.
I looked at Homesense, they have pretty decent prices on random bake ware, and found one for $7. But the line was huge and didn’t want to wait for just one thing. So, I didn’t get it.
I am glad I didn’t.
My husband was cruising the housewares aisle at Value Village and found a never been used, sticker still on madeleine pan for $5.
That is not the best part.
We checked on Amazon, it sells for $35!
That is a major score! Brand new! Five bucks!
Onwards to the recipe.
The ingredients are not too obscure, and it looks pretty simple, mix wet, mix dry, I don’t even need my mixer.
It is really important to have all your ingredients out before you start your bake. I usually put things away as I am done with them in the recipe. That way if I forget something – you know like the lemon extract – you can tell because it is still out.
I was supposed to add the lemon extract to the butter and lemon zest but forgot. I simply added it to finished batter.
This recipe calls for chilling before piping into the mould.
So, I left the batter overnight and when I pulled the plastic off it smelled amazing.
The lemon was pronounced but not over-powering.
I filled the piping bag; the batter was a little tough as it was chilled over night but was able to pipe it into the moulds.
This recipe is for 2 pans of 12 madeleine moulds. I only have one. They are only in the oven for 12 minutes, so I will do two rounds in the oven
A quick tip to cool your pan is to run it under cold water to bring it back to room temperature.
This worked like a dream!
The first round I filled a little too much, but they came out ok. I was only able to get 10 for the second batch of bakes.
These smelled amazing and the kids loved them
Martha offers some alternatives to the lemon, and I think I am going to try the plain vanilla ones soon.
