Bonus Post: Jamie Oliver’s Hot Cross Buns
So, I know I am crossing the streams by bringing in this recipe, but I don’t care. It is Good Friday and I am making Hot Cross Buns!
It is a pandemic and I am doing a non Martha bake because it came across my Facebook account first and I swear by Jamie Oliver’s Yorkshire Pudding recipe.
I actually have all the ingredients on hand and this is the last of my bread flour
This recipe was posted on Facebook in a video and it differs from the version from his website slightly so I am just rolling with it
Kids are home so I have special guest photographer kid #3 with me today so there are plenty of photos!
I melt the butter in the warm milk, mix of my flour, spices and the yeast in a bowl.
I add the egg in a well, just as the video showed me, then added the warm milk and combined it all to a rough dough.
I turned it out to start kneading…
I forgot to add the sugar…
there is not a lot in this recipe, but I see it sitting in the bowl on the other side of the counter.
There is a second knead after the proof, when I am supposed to incorporate the dried fruit.
I will add it then and hope for the best
I keep kneading for ten minutes and it smells really good
I put it in the oven to proof
I am not sure if this is what it is supposed to look like. It is almost wet
Oh well, I have come too far now
I turn it out and sprinkle my cranberries, raisins and sugar and knead it together
I try my best to get 12 equal pieces to roll and form the buns
They are not even, but there are 12 and I am letting them rise
After they have risen for 30ish minutes, I make the paste for the ‘cross’ on top
These have really spread out rather than puffed up
And there is really only just enough paste…I would do 3 Tbsp each instead of 2 going forward.
Into the oven they go
They smell really good
These really aren’t what I thought they would look like, very flat and like pancakes I wanted them to be a little more puffy and dome like
I slather them with honey as per my instructions and wait for the gang to tell me what they think. I think they have pretty good flavour, nice spice cake type flavour, but not overpowering
Hubby thought they were good and taste like a hot cross bun! Kids said they were too dry.
I will say these were super quick to pull together and no special ingredients needed, so I will keep it in my repertoire.
OK SIDE NOTE: I was not happy how these turned out and upon further investigation and comparing the video recipe and written recipe the yeast activation component was very different. So I made another batch following the written directions and they are beautiful. Nice, puffy, what you think Hot Cross Buns should look like. They taste really good too! I used the new one in the top photo and have them side-by-side below.
