Buttermilk Biscuits (Cheddar)

Back to biscuits!
I had a kid home with me today and am looking for a quick bake that can double as an afterschool snack.
I had all the ingredients for buttermilk biscuits, so I thought I would try them.
I have made biscuits from the book before and I am not anticipating any trouble
Martha offers a cheese variation and I am going with that, as I like cheese and have already had plain ones.
This recipe calls for 3 cups of shredded cheddar cheese, that’s a lot. I love cheese, like LOOOVVVEEE cheese! I am a everything is betta with feta kinda girl. But this seems excessive – but I am in!
I whisked the dry and cut in the butter – easy peasy
Then I added the cheese, then the buttermilk
This recipe came together better than the last biscuit recipe I made – not quite as dry
Once I patted out the dough I revisited my trusty 2 ¼ inch biscuit cutter – aka my stemless wine glass.
Again, I was able to get 24 rather than the 12 the book says I will get.
I made less of a mess with the brushing the tops of the biscuits before I put them in the oven
Biscuits seem to be messy bake for me
I am not trying to be a slob, but the flour is everywhere!
They baked nicely, got nice and puffy and smelled terrific
These were really good, flaky, delicate and light – with the perfect amount of cheese
It was not over powering and you could see it throughout the biscuits
Hubby and kid #1 really enjoyed them and relatively easy to make.
These make a great afterschool snack
