Cheesecake Thumbprint Cookies
Who doesn’t like cheesecake?
I love cheesecake, so these are a no brainer for me
Side note: I didn’t have sour cream on hand, and almost never do, so I substitute plain Greek yogurt.
With this recipe you make the filing first and then the cookies
I have never made thumbprint cookies before, not part of my repertoire, so these will be interesting.
The first step of creating the filing is pretty simple, however Martha tells you to use an electric mixer with the paddle attachment.
The quantity of ingredients are not enough for my mixer, making the process more difficult – using a handheld would be better.
Ok so this was more involved than I thought
The cookie dough was simple enough, butter, sugar, flour. But after you scoop them and get them on the tray and indent them, you bake for 10 minutes, then indent again, then bake again, then cool, then fill, then bake again!
Urgh! This is more steps than I wanted.
I wanted this to be quick and painless and so far – not quick – they smell good though!
I recommend using a tool to make the imprint, when the cookies are hot, it is difficult to re-indent them with your thumb.
The cookies have cooled and I am filling them
I tried a piping bag instead of a teaspoon and it worked like a dream
Back in the oven they go!
Full disclosure: I was baking these as I had to make arrangements for my kids whose bus was late and forgot they were in the oven so I think they are a little over done
Guys, worth the effort
It is like a shortbread and a cheesecake had little cookie babies!
There is a chocolate variation that I am really looking forward to trying as well
The only down side is they need to be refrigerated
Otherwise Totally Bakeable!
