
Fig Walnut Bread
So, there are only a few quick bread recipes left in the book and I don’t carry figs so I sent hubby out to get some.

He bought fresh figs, this recipe calls for dried figs, so I had to dry them out.
I also had to halve the recipe as dried figs are less volume than fresh
I have a dehydrate feature on my oven, it takes a few hours, but it worked out really well
Until the recipe tells you to re-hydrate half of the dried figs and pulverize them in the blender! Oh Martha!
Fig chaos aside, this is a pretty straight forward quick bread recipe
Mix your wet, mix your dry and combine then add your remaining dehydrated figs and walnuts
This goes pretty well; I have a helper to bring it all together
I bake it and it smells pretty good.
I am a little worried about it being too wet and not coming together like the Pear Spice Bundt Cake, oh well fingers crossed

It comes out of the oven and out of the pan easily enough and stays in one piece!
This was a hit!
It was lighter than I expected and had a nice flavour, the boys liked the hunks of fig and walnuts
It was definitely a departure from our standard banana bread or pumpkin loaf and just a quick and easy
Depending on the availability of dried figs, I will make this again
Absolutely Bakeable!
