Marble Cake with White Chocolate Glaze

For my first attempt I picked something relatively simple with on hand ingredients.
I like a quick bread recipe. I will often make a banana bread for the boys before school. It takes little to put together and bakes while we get dressed and ready to head out – and I always seem to have a few ripe bananas kicking around.
For the most part this recipe was easy.
I found my batter was runnier than that in the photos in the book but was not concerned. I had to substitute the buttermilk and the cake flour, as didn’t have those on hand and have substituted before.
One hiccup I had was I added, the chocolate to the wrong batter.
The recipe read to set aside a third of the plain batter and add the cocoa mixture to the reserve. I added it to the larger portion – thus making it runnier.
Once out of the oven, it didn’t look any worse for wear.
The glaze was simple, but there was a lot…Martha does not need to be frugal with her glazes I guess.
This cake was amazing!
The flavour and texture were bang on! It was easy to put together and I had all the ingredients on hand.
This cake was gone in a day and I have made again since.
