
Oat and Dried Apricot Scones
(Substitute Golden Raisins)
Have a helper with me today, it looks seemingly easy. I don’t have apricots but I do have golden raisins which is one of the acceptable Martha substitutes.

It is pretty simple, combine all the dry, then add the cold butter.
I have a pastry cutter from my one grandmother who was most definitely not known for her baking…so why did she have a pastry cutter?
I will never know.



I used my new recruit for the cutting in of the butter…I hate this step….it is the worst. It seems to take forever and I am more than happy to delegate on this one.
We added the raisins and then the egg and buttermilk mixture


It came together easily and my trusty assistant turned it out no problem

We flattened it and cut them in sort of triangle shapes – hey it called for 8 and we got 8!

I didn’t realize you had to freeze the dough before you baked it, I had to wait.

Waiting….I don’t like waiting….I am not good at it
So helper number one needed to go to swimming lessons. I luckily found another helper to brush the egg wash on to the scones before baking.
After a meticulous brushing of the egg wash and sprinkling of some sugar we put them in the oven.

They smell really good
These are what scones are supposed to be.

They were still warm when we tried them, they were soft and not too sweet, they could use more raisins
The only thing I would change is size. Making these 16 small squares instead

Assistant one and two liked them

And hubby gave them a “really good!”
