Oatmeal-Raisin Cookies

Ok, I have been wanting to make these for a while, but Costco has been out of oats forever! They were finally back in stock last week, so I put these on the agenda.
Cookies are not that difficult, and I have a helper with this recipe so let’s jump in!
I had my oldest giving me a hand with some of the measuring and mixing.
These came together nicely, no surprises with the dough
I used my 2-inch ice cream/cookie scoop to roll the cookies out on the sheet.
One trick I have for rolled balled cookies is as soon as they come out of the oven, press down with the back of a spatula to flatten their shape.
It is not really my trick, it was in my grandmother’s recipe for similar cookies and I have used often.
These came out soft and chewy – almost cake like.
The maple syrup added a great flavour to them.
I got a text from my husband the next morning telling me that they are better the next day, raisins are more pronounced.
Will definitely make these again
