Old Fashion Berry Layer Cake

Oh cakes I love you…

I have real success with cakes, even the trickier ones, I like getting creative with them and am developing quite the repertoire that you can see here

This is definitely a simple bake with a rustic approach to decorating/frosting

There are however 10 eggs needed for this bake which seems excessive, but we will see

The cake is sugar, eggs, vanilla and oil mixed then a flour and cornstarch mixture is added, it is on the delicate side so I am careful not to over-mix

While the cakes are in the oven, I gather my berries and cut them up.  I am using strawberries, blackberries, raspberries and blueberries

Once the cakes have baked and cooled, I use my handy-dandy cake slicer gadget from my brother and split the cakes.

They are light and springy and smell really good

I have whipped my heavy cream into oblivion with some powdered sugar and vanilla and am ready to assemble my cake

This is the tricky part using the right mount of whipped cream to berry ratio

Once I am finished, it looks ok, a little heavy in the filling of the cake but it seems to be holding its shape well enough

Cutting into this is more difficult than expected and is a bit messy…but it tastes delicious!

It tastes like summertime!

The only thing I would amend is making the berries smaller – I only cut the strawberries, but I would cut them all next time just to make it a little more manageable and maybe go a little easier with the cream

All in all an easy bake with great results
