Pear Spice Bundt Cake
This recipe is in the Simple Baked Goods section of the book.
Hopefully it goes that way
First up making syrup to cook down some pears
Guys, I burnt the sugar!
This is the first time I have done that since starting this project
Full disclosure, I was preoccupied with getting the nine million spices measured and took my eyes off the prize – Upside it was only 1/3 cup of sugar
Ok trying again and it goes well
I am waiting for the pears to cool and measuring out the rest
Ok so the rest is hopefully uneventful…beat butter and sugar, add the eggs, add the flour.
There is a lot of batter here…I hope my Bundt pan will hold it all
So, this is not the Simple Baked Good that Martha proclaims it to be
But it’s not the books fault. We are in school shutdown and self-isolation right now and I am a little distracted with the kids home for such an extended period of time
There is too much batter and it spilled a little when I rotated the pan at the half way point
I should have put a cookie sheet under the Bundt pan from the get go, but I didn’t – distracted!
So once the burning-of-batter-on-the-floor-of-my- oven smell became prominent I got some off the oven floor and put a cookie sheet under it – but I think it is a bit far gone
Open the windows!
This needed an extra 30 minutes to cook
Things do not look good
Oh my gosh – that escalated
Here is what we are looking at
It got stuck in the pan, so I waited a while and peeled back where it was stuck to the non-greased section of the pan and it half came out
After some coaxing, the rest fell out
I think there are too many pears, it is very, very moist. Maybe too moist
It is almost falling apart
The cream cheese glaze and pear chips are listed as optional and I am not wasting good cream cheese on this mess
Ok so I have given it some time to relax it is not terrible – I would not serve it to anyone outside my house based on looks but it is not as tragic as I first thought
It is a little moister than I would like, but it has great flavour. It is an excellent spice cake
The pears are fine, but I really want to try this with apples instead of pears
Kids all liked it
Hubby thought it was great!
Even though there were difficulties I still say
Bakeable!
