White Chocolate Butterscotch Cookies

We don’t ordinarily keep cookies in the house. Not for any kind of health reason. We just don’t have any. With three growing boys they don’t last.
Maybe I will grab some Chocolate Digestives if I am channeling my late grandmother. But homemade cookies are easy enough and taste so much better, so I have a few go-to recipes for cookies that take more time to clean up than make.
I make a mean chocolate chip (thank you Betty Crocker) and a to die for sugar cookie that I found on Pinterest.
My gramma has a great molasses cookie that the boys can’t keep their hands off of and my husband has a family favourite oatmeal chocolate chip cookie that is amazing.
Cookies are no trouble for me, so I was not expecting too much issue from this recipe. It was actually really simple.
So much so that my husband was surprised at how quickly I was tidying up.
I wasn’t sure how she was going to get butterscotch flavour, but as soon as I started dropping the cookies on the sheet, all I could smell was sweet butterscotch.
I rolled the cookies into balls and put them on the sheet and made sure I rotated the sheet half way through.
The jury is back and these were a hit. These are so good! They we not too sweet, soft on the inside and crispy on the outside. Totally worth the effort and will definitely be a part of the rotation.
I substituted white chocolate chips for the white chocolate chunks as I had them on hand.
I have made these again (they are requested often!) and same result – Absolutely Bakeable!
