White Cupcakes With Strawberry Buttercream

It is my eldest’s birthday tomorrow, he is going to be 12. 

Where did that go?

Anyhow, we are having his birthday tonight and he has requested a cake from the book – White Cupcakes with strawberry buttercream.

This is not a difficult bake, and everyone is at school so this should be ok.

Usually for a kid’s birthday I take to Pinterest and use a box cake mix and make something that the kids are into

BB-8 For my oldest’s 9th birthday

Pirate Ship Cake for my middle’s 5th birthday

So nice change of pace.

All of the cupcakes in the book provide a cake option and that is what I am doing here – 8 inch round layer cake.

This is another cake with two parts, thick batter and egg whites and it is a little easier than the last one I made.

They bake up really nice and are easy to level.

This recipe calls for Strawberry Meringue Buttercream.

I have only made Swiss Meringue once before with the Dobos Torte and I will say I am a fan.

I usually am a buttercream girl, but this frosting has a creamier, lighter texture and doesn’t taste too sweet. Because let’s face it, it is all sugar.

It also calls for strawberry jam and I have some of my own that I made with my mom.

I was whisking the egg whites over heat and I got a little impatient – I know shocker! – and the sugar didn’t dissolve completely before I took it off and started beating them in the mixer.  So, the final product is a little grainy.

I added the butter without issue and folded in the strawberry jam and it smelled heavenly!

The frosting was not a smooth as the last time but I was able to frost the cake easily.  I added quartered strawberries as a garnish on the top

The inside layer I added sliced strawberries on top of the frosting before adding the to layer of cake.

It looked wonderful and the birthday boy was really happy with it.

It tasted really good too. 

The cake’s dense texture is offset by the light frosting.

And the frosting is full of strawberry flavour.

Not as easy as a box cake, but not so difficult you take a pass making it.
